How to Make French Style Grilled Red Potato Salad

Ingredients

  • 2 ½ pounds small new potatoes (red and yellow), scrubbed
  • ½ cup olive oil, divided
  • 3 tbsp white wine vinegar
  • 2 tbsp whole-grain mustard
  • 1 tbsp Dijon mustard
  • 1 small red onion, halved and thinly sliced
  • 8 cornichon, finely diced
  • 2 tbsp capers, drained
  • Salt
  • Freshly ground black pepper
  • ¼ cup coarsely chopped fresh chervil, for garnish

Instructions

  • In a medium saucepan, cover the potatoes with water and add 2 tablespoons salt. Bring to a boil then reduce heat and let simmer until tender.
  • Drain potatoes and slice in half once cool.
  • Heat the grill to medium.
  • In a large bowl mix the potatoes with 1/4 cup oil and season with salt and pepper.
  • Place the potatoes on the grill, cut-side down and grill until lightly golden brown.
  • Turn the potatoes over and continue grilling until just cooked through.
  • While the potatoes are grilling, whisk together the vinegar, both mustards, and 1/4 cup oil in a large bowl.
  • Stir in the red onion, cornichon, and capers.

Ingredients

  • 3 sweet potatoes, skin on and sliced into 1/2-inch rounds
  • ½ cup extra-virgin olive oil, plus more for the potatoes
  • ¼ cup white wine vinegar, preferably Chardonnay
  • 2 tbsp capers, chopped
  • 2 tbsp honey
  • 1 tsp whole-grain mustard
  • 1 cup scallions, sliced
  • ½ cup cup walnuts, toasted
  • 1 green apple, cored and julienned
  • 1 tbsp chives, sliced
  • 2 tbsp white sesame seeds, toasted
  • Salt
  • Freshly ground black pepper
  • Fresh parsley and cilantro leaves, for garnish

Instructions

  • Preheat a grill to medium heat.
  • Sprinkle the potatoes with salt and pepper then coat with olive oil.
  • Grill the potatoes until caramelized, about 4 minutes on each side.
  • Place the potatoes on the top rack and close the grill for about 20 extra minutes so they finish cooking through.
  • Remove the potatoes from the grill and let them cool to room temperature.
  • To make the vinaigrette, whisk the vinegar, capers, honey, mustard, and olive oil together in a small bowl. Season with salt and pepper.
  • Dice the potatoes into large chunks and mix in a bowl with the scallions and walnuts. Season with salt and pepper.

Ingredients

  • 12 red potatoes (26 ounces, weighed on a food scale)
  • ¼ cup sliced green onions
  • ¼ cup red wine vinegar
  • water
  • ½ cup extra virgin olive oil
  • ½ tsp garlic powder (or granulated garlic)
  • ¼ tsp oregano
  • ¼ tsp basil
  • 1 tsp salt
  • ¼ tsp pepper

Instructions

  • Slice the potatoes. I quartered mine.
  • Place in a pot of water, and bring to a boil.
  • Add 1/2 tsp salt.
  • Reduce heat, and cook until tender, about 12 minutes.
  • Drain and cool.
  • Place the potatoes on the grill, cut-side down and grill until lightly golden brown.
  • Turn the potatoes over and continue grilling until just cooked through.
  • While the potatoes are cooking, make the dressing by mixing the red wine vinegar, 1/4 cup water, olive oil, garlic powder, oregano, basil, salt, and pepper.

  • 2 pounds Yukon gold potatoes (5 to 6 potatoes)

  • Fold the mayonnaise mixture into the potato mixture until thoroughly coated.
