The advantage to making chicken tacos in the instant pot is that you can take whole chicken breasts and turn them into shredded chicken bits that are perfect for tacos in a matter of minutes. It’s a much healthier way than cooking them up in a pan with some oil, and it’s a lot faster than trying to use a slow cooker to make your shredded chicken.

I prefer using the instant pot to make shredded chicken instant pot tacos because of how quick and simple it is when using this method. There’s not a lot you have to do and you don’t have to watch the pot as it cooks.

You basically throw everything in and the instant pot takes care of the rest. That makes for a very simple dish that’s quite tasty with the right ingredients.

Anyone looking for a low effort, delicious Mexican dish should definitely give this a try.

Instant Pot Shredded Chicken Tacos


  • 3 boneless skinless chicken breasts
  • 1 cup of chicken broth
  • 115 ounces of roasted tomatoes
  • 1 tsp of salt
  • 1 tsp of garlic powder
  • 1 tsp chili powder
  • 1 tsp of ground cumin
  • corn tortillas
  • shredded cheese, sour cream, guacamole, and tomatoes for serving


  • Put the chicken, chili powder, garlic powder, cumin, chicken broth, and tomatoes in the instant pot. Be sure to include the water from the canned tomatoes as well.
  • Cover your instant pot and set to pressure cook for 20 minutes. If you're using frozen chicken breasts, set it for 30 minutes.
  • When the chicken is done cooking, allow the cooker to vent and depressurize and then cover the pot. To create shredded chicken tacos instant pot, use a fork to shred the chicken. It can be easier to shred it with two forks rather than one.
  • Serve your chicken in tortillas and topped with whatever toppings you like, including cheese, guacamole, tomatoes, sour cream, and more.

Making Shredded Chicken for Tacos Instant Pot

How do you make sure the chicken turns out just right for this dish? That really is the most important component for the entire dish. Part of ensuring your chicken turns out right is cooking it well and seasoning it well.

When you use the instant pot, makes it easy to cook it just long enough so that it’s tender and succulent. Keep in mind that you need to alter the cooking time based on whether your chicken breasts are frozen or thawed out.

You also want to make sure you’re choosing chicken that has not gone past its expiry date and it still looks fresh. I think skinless boneless chicken works best for this dish, because it keeps the texture uniform. It also helps the chicken to be lean and healthy.

Having skin on the chicken will definitely change up the texture of the dish, and keeping bones out of this dish makes it a lot easier to eat.

So, you can make instant pot shredded chicken tacos from frozen chicken and you don’t have to change much about the preparation. Simply add another 10 minutes onto the cooking time compared to how long it would take to cook if the chicken breasts were thawed out.

Making Your Chicken Tacos Spicy

There are a few ways to add a little spicy kick to these tacos. One simple way to do that is to use fire roasted tomatoes in place of regular canned roasted tomatoes. You can also add some jalapenos or another kind of spicy pepper to the mix. There’s all sorts of toppings you can add in, even something as simple as ground chilli flakes.

You may want to add a little salsa to your tacos as well, and you can use a medium or hot salsa to add some heat to this dish. Any kind of hot sauce, cayenne pepper or red pepper flakes can definitely make this hotter dish, and it’s up to you how hot you want it.

Just keep in mind that I didn’t add anything spicy to the recipe, so if you don’t want it spicy, just stick to the recipe. This is definitely a dish that benefits from some spiciness, however, and the corn tortillas can help minimise the lasting effect of the spiciness in your mouth. So, don’t be afraid to experiment with a little heat in this dish.

What Kind of Toppings Go Well on This Dish?

I have given you a few suggestions for toppings you can use on these tacos. There’s plenty more you can add, though, and I would suggest anything that you put in burritos or tacos can be added to these as well.

You can even fill out the dish and make it more like a whole meal by adding rice or cooked beans to the tacos.

Some of my favourite additions for toppings for these tacos would be pico de gallo, fresh avocado, and lettuce. All of these change up the texture and taste in interesting ways, and that’s how I like to experiment and change up my tacos.

I play around with the different textures and flavours to give myself something different each time, if possible.

What you can do is make up a large pot of shredded chicken mixture to use throughout the week. Then, you can create different tacos for each meal, and you can make this dish in a few different ways.

One of the most interesting ways to change up this taco dish is to fry your tacos in a little bit of oil for a minute or two. This gives them a crispy texture but may not be the healthiest way to make them. If you want to make it a little healthier, you can simply throw all your ingredients on the tacos and bake in the oven for a few minutes as well.

Once again, you get a crispy texture that’s a nice way to change up this dish. 

I think this is a great way to put the instant pot to good use by making these instant pot chicken tacos. By using the instant pot, you’ll save yourself a lot of work to cook up your chicken very quickly without much fuss or mess.
