How to Make The Ultimate New York Pizza at Home

There’s something about the mouthwatering taste of New York pizza that makes us want to keep coming back for more. Ordering take out does get a little expensive, however, and we don’t want to drive all the way to the Big Apple just for a slice.

The solution? Make one at home, of course!

It took me a while to find the recipe that’ll make any NY pizzeria proud and maybe a little intimidated, given how similar it tastes to the original! Here’s how to make a New York pizza at home, plus New York-style pizza sauce recipes that’ll blow your mind.

Making pizza is an art form. It takes patience, dedication, and just the right amount of ingredients to make it to the top. Plus, cheese, cheese, and more cheese. But that’s just me.

New York Pizza Dough

Ingredients

  • 3 3/4 cups bread flour
  • 1/2 tsp instant dry yeast
  • 1 1/4 cups lukewarm water
  • 2 tbsp vegetable or olive oil
  • 3 tbsp granulated sugar
  • dash kosher salt

Instructions

  • Combine the ingredients in this order: flour, instant dry yeast, granulated sugar, salt, and lukewarm water. The oil is added last after the flour has all been incorporated.
  • If you're using active dry yeast, you'll have to activate it by adding it to warm water. Let it sit for about five minutes until it's fully dissolved. Once it blooms, add it directly to the flour mixture.

Time to Knead It

  • Once you've mixed the ingredients, it's time to knead. If you have a stand mixer, attach it with a dough hook and let it do its thing. Leave it for about three minutes at speed 1 or 1.5 until the dough isn’t sticking to the walls of the bowl.
    There's a ton of different kneading methods to try, but I believe the best technique is to use the heel of your hand and roll the dough across your lightly floured work surface. Use your other hand to fold it over and start kneading once again.
  • You'll know it's ready when it's velvety smooth, and stretchy. Don't knead it too long, or it'll over-strengthen the gluten, and it'll be difficult to stretch into a pizza shape.
  • If you have a bit of time on your hands, ferment or "cure" the dough in your refrigerator for 24 to 48 hours. Doing so slows down the yeast activity, which enhances the flavour and texture of the crust. All good things come with time, so be patient!
  • If you’d rather, understandably, do it immediately, then that’s okay too. Simply cover the dough with a dry towel and leave it for 20 to 30 minutes to rise.

While waiting for the dough to rise, it’s time to make the sauce. Here are two of the best New York-style pizza sauce recipes I’ve tried and tested.

Authentic New-York Pizza Sauce

Ingredients

  • 1 can whole peeled tomatoes
  • 2 cloves garlic
  • 2 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp red chilli flakes
  • 1 white onion
  • 1 tsp sugar
  • 1 tsp salt

Instructions

  • Blend the tomatoes into a chunky puree using a food processor or mill.
  • In a medium saucepan over medium-low heat, combine 1 tablespoon of olive oil with 2 tablespoons of butter.
  • Once melted, add your minced garlic, oregano, and salt. If you want a bit of a spicy kick, add a dash of red pepper flakes.
  • Stir continuously for about 3 minutes.
  • Add the tomatoes you've set aside, along with a tablespoon of sugar, directly to the butter mixture. Peel and slice the white onion in half and add it in there too.
  • Once it simmers, reduce the heat of your stovetop to the lowest setting. Leave it for about an hour and stir occasionally.
  • Discard the onion once the hour is up. Let it cool for a while before using it on your pizza.

 

Italian-Inspired New-York Pizza Sauce

Italian-Inspired New-York Pizza Sauce

Ingredients

  • 1 can whole peeled tomatoes
  • 2 garlic cloves minced
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp fresh basil chopped
  • 2 tsp dried oregano
  • 1 1/2 tsp sugar
  • 1/4 tsp red chilli flakes
  • 1 tsp onion powder
  • 1 tsp sugar
  • 1 tsp salt

Instructions

  • To prepare this sauce, combine the tomatoes, garlic, salt, oregano, basil, red pepper flakes, and sugar in a food processor and process until smooth.
  • Don't have a machine? No problem. Simply combine all the above ingredients in a medium bowl and stir it with a whisk until it’s all combined together. You can even crush the tomatoes using your hand or can use the back of a glass cup.

Prepare the Pizza

Dough? Check. Pizza sauce? Check. Now for the part we’ve all been waiting for: making the actual pizza!

  1. Preheat the oven to 475°F (245°C) for at least 30 minutes.
  2. Prepare your desired toppings. Traditional NY-style pizza is topped with tomato sauce and mozzarella only, but you can add any topping you want. Just remember not to put too much as it might prevent the crust from getting crispy.
  3. Divide your dough into 2 or 3 balls. Work one ball of dough at a time and flatten it with your hands on a lightly floured surface. Start at the centre and slowly work your way towards the edges until the dough is at your desired size.
  4. Add the sauce and your toppings to the stretched dough.
  5. Bake until the crust is well-browned and the cheese is bubbling.

And you’re done! Slice each pizza into about 8 wedges and enjoy.
