1tbspbutter
1tbspall-purpose flour
½cupsharp cheddar cheese
½cupPepper Jack Cheese (or continue with another 1/2 cup cheddar)
1cupmilk, (any percentage would do, but high-fat milk makes for a creamier sauce)
Instructions
Similarly, start by grating the aged cheddar cheese into large shreds using the larger hole on a box grater.
Prepare a roux by melting the butter and adding the flour to a medium pot, then mixing until golden brown on medium heat. This should take about a minute.
Slowly and gradually pour in the milk and cheese shreds over the mix while whisking. Make sure you continue whisking and break as many chunks as you can.
Take the mixture off the heat and allow it to cool a bit.
