Ingredients
For the Corned Beef
2Ibscorned beef brisket
1nion, peeled and quartered
3cloves of garlic
1bay leaf
6whole peppercorns
Water to cover
For the Mashed Potatoes
4large russet potatoes, peeled and quartered
1/2 cup warm milk
4tbspunsalted butter
Salt and pepper to taste
Instructions
Place the corned beef in a large pot along with the onion, garlic, bay leaf, and peppercorns. Add enough water to cover the beef. Bring to a boil over high heat, then reduce the heat to low and simmer for about 3 hours, or until the beef is tender.
When the beef is almost done, start making the mashed potatoes. Boil the potatoes in a large pot of salted water until they are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the warm milk and butter, then mash until smooth. Season with salt and pepper to taste.
Once the beef is done, remove it from the pot and let it rest for a few minutes before slicing. Serve the sliced beef with the mashed potatoes.
