Place a frying pan on the stove in add your butter. Cook on low to medium heat.
Add your shredded onion and use a wooden spatula to stir the onions until they cook to a golden brown and become soft. Then, add garlic and stir.
Put your water into a large pan 10 foil. Once the water begins to boil, add stock cubes, sugar, salt and pepper, herbs, and your garlic and onion mixture. Add in potatoes and carrots as well.
Allow your soup to simmer on low heat for an hour. Pour soup into a blender and blend until thick. Pour the contents of the blender back into your pot and simmer for an additional 10 minutes.
