Chicken Tortellini Soup

Ingredients

  • 4 cups low sodium chicken broth
  • 2 cups shredded chicken
  • 2 cups cheese tortellini or any fresh pasta
  • 3 peeled carrots
  • 1 cup diced celery
  • 1 sliced onion
  • 1 tsp dried parsley
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt&pepper

Instructions

  • Add the vegetables, spices, and broth to the instant pot and set to high pressure for 3 minutes.You can also cook the veggies for about 10 or 15 minutes on low heat on the stove, making sure that they’re not overly cooked. For this recipe, you can swatch and use any vegetables you like. You can add broccoli, zucchinis, or potatoes.
  • It will take the pot about 10 minutes to reach the desired pressure, and then you can release it. Use a towel to protect your hands from the hot steam.
  • Turn the pot to sauté and add the chicken and tortellini.
  • Cook for 5 minutes or until the tortellini is cooked. If you’re using a regular pot, lower the heat and let the mixture simmer until the tortellini has reached the desired tenderness.
  • Serve immediately
