Vietnamese Shredded Chicken Salad

Ingredients

For The Salad

  • 2 cups shredded chicken
  • 4 cups shredded cabbage
  • 2 cups shredded carrots
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 cup fresh mint roughly cut
  • 1/2 cup fresh cilantro roughly cut
  • 1/2 cup chopped peanuts

For The Dressing

  • 3 limes juice from the limes
  • 2 tsp siracha sauce
  • 3 cloves garlic
  • 2 tbsp sugar
  • 2 tbsp Vietnamese fish sauce
  • 3 tbsp vegetable oil

Instructions

  • In a large bowl, mix all the veggies with the shredded chicken.
  • In a separate bowl, whisk the ingredients until the sugar is dissolved. Use less Siracha sauce if you’re serving the salad to children.
  • Toss the dressing over the salad and add the peanuts on top.
