Chicken Scotch Broth Soup

  • 1 chicken small
  • 1 tsp parsley
  • 4 carrots large
  • 1 onion or leek
  • 1 bouquet garni
  • 1 cup beans and pulses mixture
  • 1/2 cup barley
  • 1 tsp pepper
  • 1 tsp salt
  • 1 pint water


  • Put the water in the pot, and adjust the heat to medium.
  • Wash the chicken and place it in the pot.
  • Cut the carrots, slice the onions, and put them along with the bouquet garni in the pot.
  • Simmer the mixture for one hour.
  • Add the parsley and let it cook for another hour
  • Take your chicken out of the pot, separate the bones, and return the fillet chicken meat back home in the pot.
  • Put in the beans-pulses mixture, and leave it for one more hour.
