Ingredients

  • 1 broth vegetable mix packet
  • 1 leek
  • 2 litres vegetable stock
  • 1 onion
  • 4 carrots
  • 150 grams kale
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Let the broth vegetable mix soak in water for at least 8 hours. You can leave it overnight the night before the cooking day.
  • At the outset of cooking, begin by draining your soaked broth vegetable mix. Then, throw it in the cooking pan, and add the fresh veggies.
  • After adding the carrots, the leeks, and the onion pour in your vegetable stock.
  • Let the mix simmer from one to two hours, or until the veggies become tender.
  • Just when you’re about to turn the heat off, add your kale and let it simmer with the mix for extra five minutes.
  • Now turn the heat off, the cooking is done.
  • Regarding serving, you can serve it with some oatcakes, for example. And enjoy!
