Get a large pan and melt the butter over medium heat
Add the shallots, then the sweet potatoes
Let the vegetables get a rich butter coating and a golden color
Add the orange juice and top it with a little water if needed
Cover the pan, and let it simmer on low heat for about 15 min
Season with all the spices when the sweet potatoes are tender
Mash with a hand tool, and serve in a pretty dish
Garnish with the orange zest
