Honey Sesame Stick Recipe

Ingredients

  • 1 cup whole wheat flour (about 5 ounces)
  • ¼ cup sesame seeds (about 2 ounces)
  • ¼ cup wheat germ (about 1 1/2 ounces)
  • ¼ cup honey, divided
  • 4 tbsp sesame oil, plain not toasted finishing oil
  • 6 tbsp water

Instructions

  • Add the flour, sesame seeds, and wheat germ to a mixing bowl and whisk to combine.
  • In a small bowl, add 2 tablespoons of honey, sesame oil, and water then mix well.
  • Stir the wet ingredients into the dry ingredients.
  • Add the remaining 2 tablespoons of honey and mix thoroughly. Knead any remaining bits into the dough by hand.
  • Divide the dough in half and flatten each portion into 1-inch thick squares.
  • Wrap each square in plastic and let them sit in the fridge for 30 minutes. This allows the dough to get firm before rolling.
  • Once the dough has chilled, heat the oven to 350°F.
  • On a lightly floured surface, roll out the dough to 1/8-inch thickness and cut it into small rectangles (around 1/4-inch by 3/4-inch) using a knife or pizza wheel. Alternatively, you can roll and cut the dough according to your desired shape but make sure the size is uniform is to achieve even baking.
  • Roll each piece between your palms to form think sticks (or leave the pieces as they are) and place them on a parchment-lined baking sheet.
  • Bake for 10 minutes, then flip the pieces on the other side so that the bottoms don't brown.
  • Continue baking for 5 to 10 minutes until the sticks are crisp but not brown.
  • Remove the sticks from the oven and let them cool entirely. Store in an airtight container.
