Zucchini Bread Recipe Barefoot Contessa


  • 2 cups of sugar
  • 3 eggs
  • 1 tsp of baking soda
  • 3 cups of flour
  • 3 tsp of vanilla extract
  • ½ tsp of nutmeg
  • ¼ tsp of baking powder
  • ½ tsp of salt
  • 3 cups of zucchini
  • 1 cup of butter, melted
  • 2 ½ tsp of ground cinnamon


  • First, prepare your zucchinis by washing and peeling them. Then, shred them and deseed if necessary. I would recommend deseeding if the seeds are large.
  • Preheat the oven to 325 degrees Fahrenheit.
  • Combine all of your ingredients except for the zucchini.
  • Fold the zucchini in.
  • Pour the bread dough/batter into two prepared (greased) bread pans.
  • Bake the bread for approximately on hour. You can check before the time is up to see if they are done. You will be able to tell the zucchini bread has finished when you poke a toothpick in the center of it and the toothpick comes back out clean.
