Classic Potato Salad

This Classic Potato Salad is a comforting and creamy side dish that's a hit at any picnic or potluck. Made with tender potatoes, crisp celery, and a tangy mayonnaise dressing, it's a timeless recipe that never goes out of style.

Ingredients

  • 2 pounds of potatoes
  • 1 cup of mayonnaise
  • 1 tbsp of mustard
  • 1/2 cup of chopped celery
  • 1/4 cup of chopped onion
  • 2 hard-boiled eggs, peeled and chopped
  • salt and pepper to taste
  • paprika for garnish (optional)

Instructions

  • Wash the potatoes and cut them into 1-inch cubes. Place them in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 15 minutes.
  • While the potatoes are cooking, prepare the dressing. In a large bowl, combine the mayonnaise, mustard, chopped celery, chopped onion, and chopped hard-boiled eggs. Stir until well mixed.
  • Once the potatoes are cooked, drain them and let them cool slightly. While they're still warm, add them to the bowl with the dressing and stir until the potatoes are well coated.
  • Season with salt and pepper to taste. If desired, sprinkle with paprika for a bit of color and extra flavor.
  • Chill the potato salad in the refrigerator for at least 2 hours before serving. Enjoy!
