When thinking about snacks and desserts, cookies are one of my go-to snacks. They’re rich and delicious, plus they’re very easy to make. Along with cookies, brownies are on the list too. Some days I’d have a dilemma of which one to buy or make. And then I wondered, why not bake both– wait, what’s even better, why not mix them?

So I scoured the internet for the best cookie brownie recipes and incorporated them into my own since I can’t find any store that makes cookie brownies in the neighborhood. Plus, I get to make it suitable for my taste too!

Popularly also called Brookies, these cookie brownies are a decadent bar of half cookies and half brownies that are easy to make with your usual baking ingredients. What’s more? You can add chocolate chips and even Oreos for a tastier cookie brownie!

How to Make Cookie Brownies

I will be sharing a recipe for classic chocolate chip cookie brownies that all your family and guests will surely love. We would need the following ingredients for a pan of cookie brownies that serves up to 20 bars.

For the cookie layer: ½ cup of softened butter, ½ cup brown sugar, ¼ cup of white sugar, ½ teaspoon of vanilla extract, one large egg, one and ½ cup of all-purpose flour, ½ teaspoon of salt, ½ teaspoon of baking soda, and 1 cup of chocolate chips.

For the brownie layer, we would need one cup of white sugar, ½ cup of melted butter, one teaspoon of vanilla extract, two eggs, ⅓ cup of cocoa powder, ½ cup of all-purpose flour, ¼ teaspoon of baking powder, and ⅛ teaspoon of salt. Instead of these brownie ingredients, you can also use a store-available brownie mix, so you’d have less to do!

However, I like mine made some scratch, so keep reading if you’re like me!

When all your ingredients are ready, prepare and grease a rectangular baking dish (preferably a 9×11 baking dish) and preheat your oven to 350°F.

Make the cookie dough first. Mix the softened butter, brown sugar, white sugar, and vanilla extract in one bowl, then add the egg and beat until the mixture is lightly creamy. Mix the flour, baking soda, and salt in a separate bowl and whisk them until combined. Add the creamy batter slowly into the flour until the dough is formed, and add the chocolate chips slowly.

Your cookie batter is now ready! Spread the cookie dough onto the bottom of the greased pan until it covers the entire pan.

Next will be the brownie mix. If you choose a store-bought brownie mix, follow the package instructions, then spread the batter on top of the cookie dough. If not, do the following.

Mix white sugar, melted butter, vanilla extract, and two eggs in a bowl, then beat until thoroughly mixed. Add your cocoa powder into the mixture and stir. Once thoroughly combined, add flour, baking powder, and salt until the batter is formed. Your brownie batter is done! You have to spread them over the cookie dough carefully so they also cover the cookie dough completely.

Now that your oven is preheated, pop in your baking dish and bake for 25 to 30 minutes, or until a toothpick inserted into the cookie brownies comes out clean, aka no batter is sticking on the toothpick, and the batter inside is fully cooked.

How to Make Oreo Cookie Brownies

If you think cookies and brownies are the ultimate dessert mashup of all time, wait until you hear it here– Oreos.

What’s better than a layer of cookie dough and a layer of brownie is a layer of Oreo. Yes, your favorite biscuit sandwich of all time is the Oreos.

To start, simply prepare your cookie dough and brownie batter as directed previously. After spreading your cookie dough over the baking pan and just before placing the brownie batter, layer as many Oreos as you can fit in the pan (in one layer only). Then add the brownie batter to the Oreo layer until the brownie batter is evenly layered.

Tes with a toothpick or a knife to see if the oreo cookie brownies are done after 30 to 40 minutes of baking in the oven, let cool before slicing, and enjoy this slutty cookie brownies!

How to Make Cookie Brownies Using a Premade Mix

If you prefer to go the easy route, you need not fret because you don’t need many ingredients to make instant cookie brownies. All you need is cookie dough and a brownie mix.

There are two ways how to make cookie brownies with a premade cookie dough. One is by a packaged, ready-to-mix cookie dough that forms into a cookie batter, and another is by using actual chocolate chip cookies.

First off, how to make cookie brownies using brownie mix. Simply follow the package instructions for the brownie mix (usually mixing oil, water, and egg) and blend well until everything is mixed together. Spread the brownie mix onto the baking sheet until the entire pan is covered with the brownie mix.

If using a premade cookie dough batter, simply follow package instructions and place the batter on the brownie mix. Alternatively, you can also use actual chocolate chip cookies, break them into smaller pieces and place them over the brownie batter, and press until they submerge slightly into the batter.

Bake as usual, then serve them when cool.

We’ve all gone the long and the easy route to make our favorite dishes. As for cookie brownies, whichever method you prefer would still leave you with a decadent and delicious homemade cookie brownie that will have you craving more.
