Fried rice is a very popular Asian dish, particularly known for its Chinese version. Today, however, we’re going Indian to introduce more variety to your meals.

Indian Vegetable Fried Rice Recipe

Indian Vegetable Fried Rice Recipe
Ingredients
- 1 cup (240 ml) rice uncooked
- 1 tbsp garlic chopped
- 2 tbsp sunflower oil (peanut or avocado can also work)
- 1 tbsp soya sauce or tamari to taste
- 1 tsp rice vinegar (or apple cider)
- Salt, to taste
- ½ black pepper coarsely crushed
- ¼ - ½ cup carrots finely chopped
- ¼ cup bell pepper, finely chopped
- ¼ cup French beans (4 to 5 green beans), finely chopped
- ¼ green onions finely chopped
- ¼ cabbage, optional
- ¾ cup mushrooms sliced, optional
- 1 green chili slit, optional
- ½ tsp sugar
Instructions
- Rinse the rice a few times until the water runs clear.
- Let it soak for at least 10 minutes. Meanwhile, pour 4 to 5 cups of water into a large pot and bring it to a boil.
- Once the water starts to boil, drain the rice and add it to the water.
- Add 1 teaspoon oil to keep the rice from becoming sticky.
- Cook the rice till it’s firm when bitten. Do not let the rice turn mushy.
- Drain off the rice, let it cool completely, then fluff it up with a fork.
- While the rice cools down, start chopping the vegetables and garlic. Set aside some green onions for garnish.
- On the highest flame, heat a wok with oil and lightly fry the garlic. Around 30 to 40 seconds should be enough.
- Add all the chopped vegetables and fry the mixture for 2 to 3 minutes. The veggies should be just half-cooked (crunchy and not soft).
- Add the soy sauce and vinegar.
- Add the optional ingredients.
- Add the sugar to balance the flavors and preserve the bright colors of the veggies.
- Immediately add the cooled rice, salt, and black pepper.
- Fry the vegetable fried rice for 2 minutes.
- Top with fresh green onions and serve.

Ingredients

Ingredients
- 2 cups basmati or long-grain rice
- 3-4 cups water
- 500 g boneless chicken, cubed
- Water
- Salt and pepper, to taste
- 1 tbsp oil preferably sesame oil
- ½ cup brown onion finely chopped
- 3 garlic cloves finely chopped
- 3 cups chopped vegetables (green beans, carrots, and green bell peppers)
- 2 large eggs
- 1 tbsp soy sauce
- 1 tsp green chili sauce
- 1 tbsp tomato sauce or ketchup
- Spring onions, chopped

- Cook the rick as mentioned above. Drain and set aside to cool.
- In a large saucepan, put the chicken and pour enough cold water to cover the chicken completely.
- Season with salt and pepper then cook the chicken for about 10 minutes or until cooked through.
- Drain, shred the chicken, and set it aside.
- Lightly whisk the eggs with salt and black pepper. Set aside.
- Over a high flame, heat the oil then add onions and garlic. Cook for 2 to 3 minutes.
