  • 1 cup aged cheddar cheese (extra sharp)
  • 1 tbsp cornstarch
  • 1 can evaporated milk, unsweetened (12 ounces)
  • 1-2 tsp of any hot sauce of your preferences (recommendation: Cholula Hot Sauce)

Instructions

  • Start by grating the aged cheddar cheese into large shreds using the larger hole on a box grater.
  • In a large bowl, bring in the shredded cheddar cheese, then add the two teaspoons of hot sauce and cornstarch, then toss them to combine thoroughly.
  • Transfer the mix into a medium-sized saucepan, then add 1 cup of the evaporated milk to the mix.
  • Cook the mixture over low heat and continue stirring it occasionally until the cheese completely melts.
  • The mixture will start bubbling and will reduce to thicken. At first, it’ll look a bit grainy. But once the emulsifiers in the evaporated milk kick in, the sauce will start coming together.
  • Continue whisking and stirring the mix until it thickens to the desired consistency.
  • Taste and adjust the level of creaminess by adding more evaporated milk and thinning.
  • Take off the heat and let the cheese cool down for a few minutes, then serve immediately with your favorite snack!

Ingredients

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • ½ cup sharp cheddar cheese
  • ½ cup Pepper Jack Cheese (or continue with another 1/2 cup cheddar)
  • 1 cup milk, (any percentage would do, but high-fat milk makes for a creamier sauce)

Instructions

  • Similarly, start by grating the aged cheddar cheese into large shreds using the larger hole on a box grater.
  • Prepare a roux by melting the butter and adding the flour to a medium pot, then mixing until golden brown on medium heat. This should take about a minute.

  • 2 cups all-natural American cheese
  • 1 cup Sharp or Extra sharp cheddar cheese
  • 1 ½ cup full cream milk
  • 1 tsp cumin powder
  • A dash of green chili powder (optional)

Instructions

  • Start by grating the aged cheddar and American cheeses into large shreds using the larger hole on a box grater.
  • Add the ingredients minor 1/2 cup of milk in a medium saucepan.
  • Cook the mixture over low heat and continue stirring it occasionally until the cheese completely melts.
  • When the mix starts to thicken, add 1/2 cup of milk to reach the desired creaminess.
  • Continue whisking and stirring the mix until it thickens to the desired consistency.
  • Take off the heat and let the melted Velveeta cheese cool down for a few minutes, then serve immediately with your favorite snack!

In addition to the regular method, you can also use microwaves and slow cookers. For the microwave version, put all the ingredients after grating the cheese into a large enough microwave-safe bowl, then let it cook on high heat for 5 minutes.

Make sure that you stop and stir every 1 or 2 minutes using a whisk. Serve the cheese when it’s ready.

As for the slow cooker method, you won’t have to mix the ingredients too many times but it’ll take a while longer.

Simply toss all the ingredients in a small slow cooker bowl and turn the high heat for 2 1/2 hours. Run by the cheese to make sure it’s going fine and give it a stir every hour or so.
