- 1.25 pound Boneless Chicken Breast cut into cutlet size pieces
- 1 cup Parmesan cheese
- ½ cup Mozzarella Cheese

- 2 Egg
- ½ cup Flour
- Black Pepper
For the Marinara Sauce
- ½ cup Finely chopped basil leaves
- 2 tbsp Olive oil
- ¾ cup Chopped shallots
- ½ cup Sliced Mushroom
- 4 gloves Garlic finely chopped
- 1 tsp Red pepper flakes
- 2 tbsp Oregano
- 1 ½ Tomato Puree or Paste
The Chicken Marinara Sauce recipe
- Heat olive oil in a large deep dish skillet over medium-high heat.
- Add shallots, garlic and saute for a few minutes until golden brown
- Add the Tomato Paste, mushrooms, and chopped basil and cook for another 2 to 3 minutes on medium-high heat

- Pat and dry the chicken cutlets and place them on a large tray.
- In a large shallow bowl, whisk the two eggs and add a pinch of salt, and set aside.
- In another shallow bowl, add half a teaspoon of salt and black pepper to the flour and mix well.
- In a third shallow bowl, mix and spread out breadcrumbs and parmesan cheese.
- Place the chicken slices in the flour mixture and cover it well with a thin coating. Pat the excess flour off
