  • 3 cups sugar
  • 1 cup water

Instructions

    1. Thoroughly wash all the red plums. Carefully remove and discard the plum seeds
    2. Combine sugar, water, and the plums in a large non-aluminum stockpot. Bring the contents of the pot to a boil and then reduce the heat. Stir continuously until the sugar is dissolved completely.
    3. The mixture will begin to thicken now and reach its gelling point. Stir frequently . to avoid sticking
    4. Check the temperature with a candy thermometer to determine whether the gelling point has been reached. If it reads 200°F to 220°F then the process is complete.
